In every restaurant in Bulgaria the first thing you will notice on the salad menu is Shopska salad which is Bulgaria’s most famous salad. It is named after the Shoppi, or natives of Sofia (the capital of Bulgaria). This salad is perfect in the summertime, when all the ingredients are freshly picked from the garden, but it is tasty and easy to make the whole year-round. Although you can always order a Shopska salad in a restaurant it is much tastier if you prepare it yourself at home. It is a quick, easy and refreshing salad to go along with every meal.

Ingredients:
4 tomatoes
2 cucumbers
2 roasted peppers or fresh green peppers
2 spoonfuls chopped parsley
2 spoonfuls chopped onion or green onion (optional)
half a pound of white cheese
salt, vinegar, oil to taste
Preparation:
Cut the tomatoes, cucumbers and peppers in small pieces, cubes if possible. Mix well with the parsley, onion, salt, vinegar and oil. Serve with white cheese grated on top and a glass of traditional home made Bulgarian ‘rakia’ - a strong grape or plum brandy. Enjoy!
